Rich Fruit Cake

Made using the boiling method, this lovely rich fruit cake is packed with flavour despite being nut and alcohol free.

First and foremost, I must apologise, we are still in September and I'm going to mention Christmas!  The festive season arrives earlier every year, I'm sorry!   I've not lost the plot, there is reason behind my apparent madness!

Cream Horns - Lemon Posset & Raspberry and Apple Crumble & Custard

A GBBO 2015 inspired bake, these cream horns have been flavoured two ways.  Firstly with a beautiful lemon posset and raspberries; and secondly with the British classic of apple crumble and custard!

How dramatic was this week's GGBO episode which saw the contestants having to leave their Religieuse a L'ancienne for two hours to see if they collapsed whilst they had lunch!  I wonder how much they managed to actually eat?!

Post Script: There were some amazing cream horns and interesting flavours submitted by other bakers in the challenge hosted by Jenny at Mummy Misfits, so I'm sooo delighted to have been awarded the Star Baker badge for my bake!  Yay! :-)

Kitchenalia #6 - Cake & Cupcake Stands

You've made a beautiful cake, now you need to present it to its best.  Here's an eclectic collection of cake and cupcake stands available over the internet all costing £20* or less!

If you're anything like me once you've made a cake, be it a straight forward Victoria Sandwich or perhaps something a little more elaborate, you'll want to present it on a cake stand.  After all, once you've gone to all that time and effort, your cake deserves to be presented in such a way that it is showed off to its best.  Cake stands do just that, being raised from the table the cake is literally placed on a pedestal, elevated from all of the other goodies adorning the table.  The cake almost seems to be at the diner's eye line, allowing it to say "look at me, don't I look good!"

Vegetarian 'Game' Pie

Week seven of the GBBO series was Victorian Week, another first for the Bake Off.   I had no real appreciation that the Victorians used sooo much gelatine in their baking, it was everywhere! 

The bakers this week were challenged with making a Raised Game Pie, a  Technical Bake of Tennis Cake and a Show Stopper of Charlotte Russe.   So although the Charlotte Russe appeals immensely to me, I'd want a vegetarian friendly so my beloved Mr E can sample it (I may have a play around another day to see what I can come up with).  The fruit cake looked nice too, but given that I have a couple of rich fruit cakes to make in the very near future Mr E & I decided to make a Raised Game Pie.

Empress Rice Pudding, with Blackberries & Apple

This beautiful version of the humble rice pudding, sees the classic mixed with a crème legere and  hides a compote of blackberry and apple within.  It's certainly dinner party worthy!

Okay, so rice pudding isn't particularly sexy and is often considered a little old school being just for the very young or infirm, but for me I love the stuff!  I find it comforting, filling, nutritious and flavoursome.  As a child, Mum would often make a large casserole dish of milk puddings and bake it slowly in the oven; Mmm it was so good, soon being demolished.

We're already at week 6 of GBBO, I feel as though if I blink the show will be over!

It was pastry this week with a signature bake of Frangipane Tart, a technical challenge of Flaounas and a showstopper of Vol-au-Vents.  During the week I somehow learnt what the challenges were and being in possession of the GBBO Celebrations book I was able to enlighten myself as to what Flaounas were; I'm sorry Paul, they just didn't draw me in!   And given the fact that Mr E didn't fancy being transported back to the 1970's with the Vol-au-Vents we rapidly decided to make a beautiful Frangipane Tart, which I was more than happy with as I adore the almond filling.

Oh my goodness!  Pitta breads!  Well more precisely gluten free pitta breads!

Week 5 of this year's GBBO was 'Free From' week., looking at sugar free cakes, gluten free pitta breads and dairy free arctic rolls.  Now, as Mr E & I enjoy making our own bread we had intended to tackle the pitta bread challenge, but as you may know if you read my Blackberry & Black Bean Brownie post inspired by the GBBO show, I attempted a gluten free loaf as a practice for the pitta challenge.  We were both terribly disappointed with the loaf and as a result the pittas were not tackled....until now that is.

'99' Ice-cream cupcake with blackberries

A fond farewell summer, it's been nice to have had you around. Cheerio until next year, mon ami.  Welcome autumn, I'm so looking forward to kicking up the golden leaves as they fall from the trees whilst you're around.  And celebrating so many family birthdays including Mr E's and my own! Hurrah!

So, as a 'cheerio' to summer and a 'hello' to autumn, I've tried to encapsulate both seasons in this cupcake.  As you can see it's a take on the summery '99' ice-cream with blackberries; a hedgerow fruit which grows in abundance and can be easily picked at this time of year.
