It was biscuit week in the GBBO tent this past week and the signature bake of 'sandwiched biscuits' was far more appealing to Mr E & I than the fortune cookies and the biscuit board game the bakers were challenged with making.
After all a double biscuit, or sandwich biscuit, is effectively two for the price of one!
Continuing to bake along with the Great Blogger's Bake Off hosted by Jenny at Mummy Mishaps, I spent a few too many minutes perusing the biscuit aisle of our local supermarket searching for inspiration for our sandwich biscuit bake. There were so many sandwiched biscuits to choose from. Custard Creams. Bourbons. Jammie Dodgers. But the one which caught my attention the most was Oreo's peanut butter flavour biscuits!
I mean, who doesn't love a peanut butter and chocolate flavoured biscuit?
Wanting to create more of a cookie style bake with the wonderful softness and chew that they bring rather than the snap of a traditional biscuit, I added melted chocolate rather than just cocoa powder into the cookie dough mixture. And with the whopping 300g of melted chocolate in these sandwiched cookies, along with some cocoa powder to bring even more more depth of flavour, there's no denying that these are chocolate cookies!
The peanut butter frosting used to sandwich together these chocolate cookies was full of peanut butter flavour, simple to make and used just 130g of smooth peanut butter (along with some butter and icing sugar!)
One of the challenges of this bake, as explained by Paul and Prue, was to ensure the biscuits were uniform in size as well as not producing a sandwich cookie where the filling squelches out when bitten into. Although the cookie dough for these chocolate cookies was hand shaped rather than cut with a biscuit cutter as you might with a shortbread for instance, by being a little OCD and weighing the dough portions before rolling it into a ball each of the biscuits have that uniform appearance - which of course made pairing them up child's play! The frosting, as you may be able to tell from the images, was also fairly thick to prevent it from oozing out when bitten into, and yet was soft enough to 'give' with the delicious nature of the cookies.
So, here's how to make Chocolate & Peanut Butter Sandwich Cookies.

Butter Sandwich Cookie recipe is certainly one to try! The recipe
produces a cookie style biscuit which is packed with peanut butter and
chocolate flavour, they're easy to make, and will satisfy the
fussiest of cookie fans!
Hand on time: 30 mins Bake time: 10 mins (see note a below) Yield: about 20 sandwich cookies
For the Chocolate Cookie Dough
- 110g Butter, unsalted
- 150g Milk Chocolate
- 150g Dark Chocolate
- 100g Granulated Sugar
- 130g Light Muscovado Sugar
- 2 Large Eggs
- 1 Egg Yolk
- 1tsp Vanilla Extract
- 220g SR Flour
- 40g Cocoa Powder
- 1 teaspoon Corn Flour
- small pinch of Salt
For the Peanut Butter Frosting
- 130g Butter, unsalted & softened
- 130g Peanut Butter, smooth (we used SunPat)
- 160g Icing Sugar
Notes: a) Although the biscuits only take 10 minutes to cook, it's likely that you will need to batch bake them depending upon the size of your oven. The whole bake could take around 40 - 50 minutes. b) You may want to weigh the balls of raw cookie dough to ensure equal size, this will aid matching them up when they are sandwiched together. Our balls of dough weighed 26 - 27g.

Thankyou Lucy, they didn't hang around for long, that pb frosting with the chocolate was far too tempting! I have to admit I struggle with the styling sometimes too. Sometimes the 'stage' seems to come quite easily, and then othertimes it's a lot more difficult and I feel as though i don't do the bake justice. I honestly think some foods are just a lot easier to photo than others.

These are most definitely Star Baker worthy. They look perfect I want to make them but I with a different filling as im not keen on peanut butter. But I know the cookies them selves will be absolutely delicious with all that chocolate in them.

I made chocolate and peanut butter sandwich cookies this week and trying to make them all even in size, I scooped out portions using a tablespoon. Your idea of weighing the dough is a far better idea to make sure each cookie is an even size and your finished product is definitely worth the extra effort!x
