14 Recipes For Using Up Egg Yolks

If you've been busy making pavlovas, meringues or even macarons it's entirely likely that your baking exploits have left you with a few egg yolks to use up.  As it turns out there are loads of different recipes which will allow you to put either that solitary egg yolk or mountain of them to good use, without just enriching an omelette or frittata with them. 

My food blogging friends came up trumps when I asked for their ideas, so if you've been wondering how to use up some egg yolks below are 14 ideas for inspiration.  The recipes have been separated into the number of yolks required for each recipe, and should any catch your eye, which I'm more than sure they will, simply click on the recipe's title to find out more!

Peanut Butter Chocolate Chip Cookies from Choclette over at Tin and Thyme.

Peanut butter has become a popular addition to many bakes these days, for very good reason, and with the addition of a dark chocolate flavoured with a hint of chili (chocolate & chili being a combination that works incredibly well) I know that this is a great cookie recipe for using up one egg yolk.

Who can resist a chocolate brownie with its paper think crust and soft squidgy centres!  This particular one is punctuated with walnut pieces with a background flavour of coffee, and uses one egg yolk along with 3 whole eggs.

Pies in general are great for using up that spare egg yolk you may have, and Candace's apple pie, inspired by her Nan, is no exception.  Brushing the crust of the pie with the egg yolk produces a wonderful golden colour when the pie emerges from the oven.

Andrea's dairy free Duchess Potatoes uses just 3 main ingredients, potatoes, olive oil and eggs (2 egg yolks and 1 whole egg) resulting in an easy and pretty carbohydrate element for any main meal.       

 

 

 

Easy Aioli with Lemon and Dill from Choclette at Tin and Thyme

Choclette explains that aioli, a mayonnaise flavoured with garlic which can include lemon juice and mustard, is easy to make and although it is classically served with radishes it is also amazing with most raw or cooked vegetables.  It takes just 10 minutes to make with a blender and uses store cupboard ingredients including two egg yolks.

If the garlic flavour of aioli isn't your thing, then why not put those spare egg yolks to good use and make some homemade mayonnaise!  Andrea explains that once you've made your own you'll always think twice about mass produced shop bought mayo!

Harking back to a childhood favourite of our family are these pimped up Triple Chocolate Orange Pinwheel Cookies.  They incorporate a popular flavour combination and are great recipe for using up two egg yolks.

Another classic way of using up spare egg yolks is by making homemade ice cream.  Kate's ice cream recipe incorporates roasted strawberries which intensifies the flavour of this popular summer fruit, and results in a frozen dessert which has a very clear strawberry and cream flavour along with being a pretty shade of pink!

These individual trifles, flavoured with raspberry and white chocolate, is another recipe which makes great use of two egg yolks.  Trifles are always popular in our family, but being individual these seemed that little bit more special.

Pastry is another great recipe for using up any spare egg yolks you made have, specifically pate sucree which is simply the patisserie term for a sweet pastry.  Kate put the sweet French pastry to great use by making these eye catching gluten free mini jam tarts.

Or if you prefer your pastry tarts a little larger how about using those spare egg yolks in these raspberry and white chocolate tarts, which uses 3 egg yolks and 1 whole egg in the sweet pastry case and creme patisserie.

Kirsty's homemade curd recipe not only makes great use of spare egg yolks, preventing them from spoiling and going to waste, but also produces a curd with an amazing colour (and no doubt flavour) which can be used in a host of different ways, from simply spread onto bread and toast, used as a filling for jam and curd tarts, as a surprise centre for cupcakes or even in a meringue pie.

Chocolate Brownie recipe great for using up five egg yolks

Kat's brownie recipe uses 5 egg yolks (no whole eggs) along with a generous amount of dark chocolate, dark brown sugar, cream and pecans for contrast in texture.  As you can see they come out lovely, gooey and fudgey!

It's possibly unlikely that you'll be in the position where you have 6 egg yolks (plus 2 whole eggs) that need using, but seeing how wonderful these homemade donuts look I'd be more than happy to be left in the situation where I'm making meringues, pavlovas and macarons just to use up the egg whites!

  1. This has to be one of the most useful round ups I have seen in ages. Egg yolks always seem trickier than whites to find uses for, although I often have spare whites in the fridge, suggesting I have used the yolks somewhere...... Mmmmmm (scratches head).

      Hahaha, I know just what you mean, and for some reason I too often find I have egg whites in the fridge left over from bakes - those egg yolks do seemingly get used :-)
