Lemon Tart with Goats' Cheese

This delicious classic lemon tart, encased in a beautiful sweet pastry, is topped with thin slices of goats' cheese before being caramelised and served.

There's something really wonderful about lemon desserts, don't you think?  Whether it's a lemon meringue pie, tart aux citron or a lemon mousse, I just love them.  They're fresh, zingy and well, simply delicious!   Mr E & I even chose to have the classic lemon tart to round off our wedding breakfast!  Simply delicious!

Out & About - Fish, Chips and Chandeliers!

Tell me, what's the poshest chippy you've ever been to.  Earlier this week we visited one with chandeliers!  Yes, chandeliers!   In a chippy!  Two beautiful, sparkling, enormous chandeliers!  Oh, and let's not forget the grand piano!  Unfortunately we didn't get to hear those ivories being tinkled, though I believe that happens later in the week.

Apple and Cinnamon Genoise Cake

A delicious and light Genoise sponge cake, filled with cream and an apple & cinnamon compote made the perfect birthday cake to celebrate mum's birthday.

The other day saw my mum celebrate her birthday.  And yes, we do call her Doris, though that's not the name on her birth certificate.  Many years ago my brother started calling our parents Doris and Malcolm and for some reason, which I'm not sure of, those names stuck.  The names really suit them and to make it even more amusing they answer to them as though they are being addressed by their actual name!  I recall Mr E meeting my parents for the first time.  He knew my parent's names but he'd also heard me refer to my parents as Doris and Malcolm numerous times. So sat around the dinner table that Sunday lunchtime, you know what's coming don't you, we were all chatting and Mr E asked my mum a question, "Doris...." and she responded as usual.  I was just in hysterics;  Mum, Dad and Mr E couldn't work out what was so funny. Well I found it funny, perhaps you had to be there.

Flour Power - A Cupcake Experiment

A side-by-side baking experiment in which I compared the taste and bake of gluten free flour against regular flour in cupcakes.

What a difference your choice of flour makes to a bake!

After all of the time consuming GBBO bakes, I decided the other day to make something delicious and simple.  What's more simple than a regular cupcake.  Nothing fancy, just a straight forward Victoria sponge topped with a cream cheese frosting.  Delicious!  However, having an unopened bag of gluten free flour in the cupboard, I decided to undertake a little experiment!

Iced Fingers - Barm Brack and Blackberry & White Chocolate

Iced fingers, two ways, inspired by the GBBO 2015 series.  Firstly are blackberry and white chocolate fingers which takes full advantage of the plentiful supply of these wonderful berries. Secondly are Barm Brack iced fingers which are packed with dried fruit and a little spice.

Three cheers to Nadiya, a Yorkshire lass, like yours truly, for being a deserving winner of GBBO 2015.  I've thoroughly enjoyed baking along with the bake off,  I've learnt new techniques and skills and remembered how much I love making pastry (until the other week, I'd not made puff pastry since I was a teen!)  And, of course I've come across some great new blogs to read, which is no bad thing!

Apple Crumble Ice Cream

Inspired by the classic apple crumble and custard, this ice cream is incredibly delicious having been made with a custard based ice cream with caramelisd apple pieces and crumble!    


I just adore apple crumble and custard.  It's simple, unpretentious and comforting.  Just like a great big hug in a bowl!  Mmm.

When apple crumble is married with ice cream, Oh. My. Goodness. It's delicious. It's irresistible. It's a wonder there's any left for Mr E to try it tasted so good!  You know when you're baking and enjoying the chef's perks of tasting as you bake, well I have to admit there was a little too much of that going on!

Triple Chocolate & Mango Tart

Inspired by GBBO 2015, this triple chocolate tart incorporates a layer of mango cream which breaks up the richness from the milk chocolate mousse, chocolate glaze, white chocolate decoration and the chocolate pastry beautifully!

As chocolate is arguably most people's favourite treat and given that it was the subject for this week's GBBO episode,  I can imagine that there was a lot of salivating going on in the households of Great Britain!  Imagine being in the tent whilst all of that beautiful chocolate was being tempered and moulded; it must have smelt amazing!
