A couple of months ago I came across the wonder of 'Aquafaba'.  I suspect most people will have come across this modern day miracle by now, but just in case anybody hasn't heard of it, Aquafaba is the liquid found in tinned beans, used to make egg free bakes!  Yes, egg free!  So anything from meringues to brownies and cookies and even royal icing to pasta!  Who ever made this discovery is a genius, and I doff my cap to them!  Clearly such a massive break through for vegan bakes & cooking.

Gajar Ka Halwa (Carrot Pudding)

Gajar Ka Halwa is a carrot pudding made in many Asian households and traditional curry houses.  It principally consists of grated carrots, cream and cardamom; it's absolutely beautiful being full of flavour and lightly spiced.  It can be eaten warm, which is how I enjoyed it, or cold, perhaps with a drizzle of milk.  It also keeps well for several days if covered and placed in the fridge.

It's the time of year now when many people enjoy going out and about for a picnic, taking with them some delectable & yummy food.  The children have broken up for their long summer holiday, the sun is out (in theory), there are blue skies all around (also in theory) and people, generally, enjoy getting out into the countryside for a picnic.

So with this in mind, I though I'd share with you a few useful items for a summer picnic which I came across after a little search of the internet.

Cholla, it's such a stunning loaf of bread when plaited, and gorgeous to eat!  It's one of Mr E's favourite home made loaves; and being an enriched dough it's so lovely to work with.

I first came across this loaf whilst watching 'Britain's Best Bakery' a couple of years ago.  Did you ever watch it, hosted by Mich Turner and Peter Sidwell?  I really enjoyed it, though sit me in front of most baking programme and you won't hear a peep out of me, other than the obligatory 'Mmm'.

'You Are What You Eat' - Cholesterol!

This post is somewhat different to what I usually share here on Only Crumbs Remain, yet it is still vey much food related.  It relates to my mum's experience in trying to reduce her cholesterol level by addressing her diet.

I think it's important that I say from the outset that this is simply about my mum's experience. Mr E & I are not doctors or nurses.  Far from it.  And therefore if you are reading this because you yourself (or someone dear to you) have a cholesterol problem, do please discuss the issue with your GP.  And PLEASE DONOT stop taking any medication without the agreement from your GP.

Cherry Clafoutis

Cherry Clafoutis

Happy National Cherry Day everybody! 

To honour the beautiful cherry, I had intended to make some fancy cupcakes, however my week didn't contain enough hours (you know what it's like!) and so I realised I needed to use our purchased cherries in something a little less time consuming.   The cherry cupcake idea shall wait for another day.

The dish which Mr E & I decided to make to feature these beautiful fruits was the easy and straight forward Cherry Clafoutis, though I'm sure you've already worked that  one out!  I have learnt that the clafoutis is a speciality dish of the Limousin region in France and the name comes from a word meaning to cover or fill.

It's certainly one of those desserts which is likely to be ordered if it's listed on a menu when Mr E & I eat out.  The problem comes when said dessert is listed alongside lemon meringue pie and cheesecake!  Decisions. Decisions.  If I ordered all 3 you wouldn't judge me too harshly would you?! :-)

Summer Strawberry Roulade with Basil & Mascarpone

This little beauty was a first for me.  Despite loving all things meringue I'd never made a roulade until the other week, thinking it was difficult.  How wrong was I!!  It truly isn't difficult.  Once you've got your meringue made, it's a quick bake in the oven to allow it to become soft and marshmallowy, and a quick roll up with cream and fruit once cold.  Super easy; and incredibly tasty!
