At long last, the sun is finally showing its face here in the UK, or at least that's what it feels like!  So to celebrate, I just had to make something with the flavours of summer.

Don't you just love picnics?  Sat upon a rug alongside a babbling brook,  with the sun shining (in theory!), the birds singing, the bees pollinating the flowers, with the people you love, and everybody smiling. And of course with great food & drink....I just love picnics.

Today, I bring you a really easy recipe just for that occasion.  A Vegetarian Scotch Egg with Spinach.  Don't you just think scotch eggs scream of picnics?  They do in my head!

Mmm, fig rolls.  Yummy, and so very moreish! 

There's no questioning my dad's love of fig rolls.  At one point last year he had twelve packets of them in the cupboard at home!  Yes, you read right.  Twelve!  Anybody would think they were going out of fashion with how he'd stockpiled them!

So given my dad's obvious love of these bite size fruity 'biscuits', I thought it would be nice to bake some for him as part of his father's day treat.

Oh. My. Goodness. Me!  Ladies & Gentlemen, you just have to try this recipe!  It's a delight, especially if you love citrus flavours.   I came across a recipe a couple of weeks ago in the June edition of the Sainsbury's magazine that I knew I just HAD to try.  It was a recipe for a Lemon Curd Tart by Eric LanlardBeing a massive fan of the humble lemon flavour it quickly made its way onto my 'to-do' bake list.

And can I tell you, it most definitely did not disappoint!

You may recall a few weeks ago I made a small batch of Vegetarian 'Pork' Pies.  Yeah, I know it's a contradiction in turn, but you know exactly what I mean by a 'Pork' Pie, so that's what they were called.  Anyway, my folks, Mr E & myself loved them.  And if stats have anything to go by, you guys were interested by them also.  They were so yummy and full of flavour that I wanted to make another version.  Don't you just love hot water crust pastry?!

Can I just say a huge "Thank you" to our lovely niece, Zoe.

When I announced that I was going to set up a food / baking blog she was very encouraging and offered to try to answer the questions I had.  Several texts and e-mails later I'm now starting to understand the technology and software a little more! I may have almost bombarded her with 'what does this mean...' and 'how do I ....' queries;  and bless her, she's answered them as best she can, pointing me in the right direction.  Zoe's a whiz with technology,  far more technologically minded that Mr E & myself.   She's the author of two fantastic blogs, Oh Zoe and Diary of a Freelancer.  Oh Zoe has recently been re-branded, previously being known as Sweet Electric.  Pop over and have a look (though not just yet), she has some great HTML tips & tricks on Oh Zoe as well as other general blogging advice.  I need to get my backside in gear to utilise some of these specific tips!!

So, as Mr E & I were popping over the county boarder to Lancashire to visit, we thought we'd show our appreciation to Zoe by making her something yummy, yet stunning.  After quizzing her mum about what sorts of flavours she particularly likes, we decided to make a chocolate cake. But although Zoe loves chocolate she often finds it a little too rich, so we decided to make a marbled chocolate cake flavoured with orange to cut through that richness.  And, as we all know, chocolate and orange is such a classic combination.

This wonderful, tasty and nutritious salad came about after being inspired by Jaqueline, who writes at Tinned Tomatoes.  Having come across her recipe for Butternut Squash, Puy Lentil & Rocket (Argula) Salad and having the majority of the ingredients in the store cupboard, I decided that the next day's evening meal was christened.  It sounded so wonderful, with lovely flavours.

For a little while now I've been yearning after a particular type of crockery.  Not only because it may help with my photography and 'staging' but also because I think they look really lovely.

The problem was, I just didn't know what they were called!  There was a lot of arm waving and drawing when trying to describe them to Mr E!  Basically a teacup set with an elongated saucer in which a slice of cake or cookie (or two) can rest.  So rather than carrying a regular cup & saucer in one hand and a side plate with a goodie in the other, this pottery creation frees up a hand.

It's somewhat obvious, but I love to bake.....getting my hands into bread dough, making cakes and pastry.  Enjoying chef's perks!  Well one needs to ensure it's good enough for human consumption!  ;-)   And even better to share it with those you love.  So when Mr E informed me that his place of work was hosting a 'Bake-Off' style event to raise money for their chosen charity, I jumped at the chance to take part!  What even better reason is there to bake than to help raise funds for those in need, as well as putting a smile on the faces of those enjoying your creations?
