So, let's get to it and bake!
Christmas Pudding and Brandy Sauce Ice Cream Yum
You will need:
1 small Pan
Wooden Spoon
Pyrex Jug (or similar)
Ice Cream Maker
For the Brandy Sauce
250ml Milk
50g Sugar
For the Christmas Pudding
How to make it:
2. Heat the milk for the brandy sauce. Pour the cream and milk into the small pan and set it over a low heat to warm through, avoid boiling it (the heated milk will mix into the roux much easier). Remove the milk from the heat once it has warmed.3. Make the brandy sauce. Place the butter into the large pan and set it over a medium heat to melt. Once melted add the flour and stir well with a wooden spoon to create a paste. This is the roux. Reduce the heat a little under the pan. Cook the roux over the heat for 1 to 2 minutes, stirring all of the time. Avoid burning it. Slowly pour the warmed milk / cream mixture into the roux stirring thoroughly. Once all of the milk has been added continue to stir thoroughly. Cook the sauce over a low heat for about 10 minutes, stirring all of the time. Add the sugar to the sauce and mix together. Continue to cook for a further 5 minutes, stirring all of the time. Add 2 tablespoons of brandy to the sauce. Stir together and taste, adding up to another 2 spoonful of brandy if required. (I added a total of 3 tablespoons.)
4. Cool the brandy sauce. Once the sauce is made, pour it into a Pyrex jug (or similar) and cover with cling film. Ensure the cling film is in direct contact with the sauce to prevent a skin from forming as it cools. Once cool enough place into the fridge to chill.

It really is Kirsten, if you love Christmas pudding & Brandy Sauce, you're sure to love the ice cream version! Even though it's obviously a cold dessert, the flavour of the brandy and that of the pud came through a treat.
