I know it may sound odd to most people, but I have a bit of a love / hate relationship as far as carrot cakes are concerned!  I love the idea that it includes carrots and it can be argued that it's 'healthy' and of course I love the frosting!  But as for the walnuts found in many carrot cakes, well I dislike them.  Really dislike them!

Bilberry & White Chocolate Baked Cheesecake

A rich, creamy & flavoursome baked cheesecake which contains a hidden layer of seasonal fruit.  The white chocolate mixture is layered up with a fresh bilberry mixture which brings a lovely colour contrast and extra flavour to this well loved dessert.

This recipe for a baked bilberry & white chocolate cheesecake dessert is constructed in such a way as to bring colour contrast when served.

Yes!  It's dessert week on GBBO (2015)!  Three cheers for desserts! 

I have such a sweet tooth.  When Mr E & I eat out he will often order two desserts on the pretence that we have will have one each, but in reality they are both for me; and yet I wonder why my waistline is increasing!  So when GBBO's Dessert Week was televised I was found sat glued to the TV screen, watching the fabulously delicious desserts being created.

Oh my, I can't believe I've never made this type of bread before!  The corn bread smelt seriously amazing whilst it was baking and for a number of hours afterwards.  It tasted so good too, being jam packed with flavour.  And just check out the beautiful speckles of colour from the sun-dried tomatoes & basil.

Wow, we're already at week 3 of GBBO!  I can't believe how fast these few weeks have flown by, though don't you find that when you get a little older.  'Tempus Fugit' as my father-in-law would have said!  This week, the bakers faced the bread challenges.  They started with quick breads, then onto Paul's technical challenge of baguettes and climaxing with their 3D showstopper bread creation.  Wasn't Paul's lion amazing - right down to the whiskers and almond claws!

I was recently bowled over by the simple beauty and elegance of a beetroot tart I saw created on 'Kew on a Plate' by Raymond Blanc; it looked so pretty, like  a simple daisy flower. And not only were the colours vivid and beautiful, it looked easy to assemble too. I just knew I had to recreate the aesthetics of the tart but with flavours liked by our taste buds.

Arlettes

It is said that good things come to those who wait, and it's certainly true where these little beauties are concerned! 

Arlettes was the bake I opted to challenge myself with for GBBO's biscuit week (S6, W2).  It was either that or the signature dish of biscotti; I must admit it was a close run thing but given that Paul's Technical Challenge of Arlettes contained cinnamon, the decision was made and these beautiful butter rich biscuits were attempted!

Mini Madeiras

The Great British Bake Off (GBBO) has returned to our screens!!  "Hurrah." The past week's TV adverts and tweets built the tension, almost taunting us with what's in store and week 1, cake week, certainly didn't disappoint.  The bakers started by making the classic Madeira Cake, followed by Mary's technical challenge of Walnut Cake and then onto the showstopper of Black Forest Gateau.  Many of the creations looked wonderful, and that was just week 1, what will they pull out of the bag later in the series!
